Vol Au Vent recipe will fit for 5 persons and it will take around 15 minutes for the preparation and 30 minutes of the cooking process. Here are the ingredients that you will need to prepare:
1 Pack of made puff pastry (1 egg with a little pinch of salt for glazing)
4oz chicken pieces or blocks
4 Medium mushrooms (chopped)
½ Tsp Dried Thyme
1 Clove garlic
1 ¼ C White wine
2 Tbsp flour
½ tsp dijon mustard or wholegrain
1c fresh whipping cream
We will focus on cooking the white creamy sauce
First, you will need to melt the butter in a pan with medium heat. Add the chopped mushrooms and saute for about 3 minutes. Once it turns to golden brown color, add the garlic and thyme and continue to stir it with the mushroom. Add the wine to the pan and turn the heat on high to shimmer so the wine will be fully cooked in the mushrooms. Add the cooked chicken pieces to the mushroom and wine mixture. Stir them well for about 2 minutes and turn off the heat and let it stand. Meanwhile, you can focus on the sauce now. Get another clean pan and add the butter till it melts. Add 2 tbsp of flour into the butter. Stir them well to form a roux and then continue to stir until it simmers over 1 minute. Gradually add the chicken stock and whisk continuously so that you will not get clumping form. Shimmer it for about 1-2 minutes and continue to stir until the sauce thickens. After that, add the fresh cream and mustard and stir to combine.
Add the chicken and mushroom into the creamy sauce and stir them to mix. Season the mixture with salt and pepper and you can taste. Simmer it for about 2 minutes and turn off the heat. You can use the pastry and you will have a starter or snack. Otherwise, you may simply use rice or fries or mashed potato to be the side dish. This is an ultimate delicacy.
