I know it’s mostly a one-pan chicken (or fish) dinner around this section, so I thought I’d change it a little and add some sausages to the mixture.

Lots of vegetables & sausages mixed with spices and olive oil and then all thrown together in one foil or parchment-coated pan = very fast preparation, crazy quick cleaning (like nothing really), and so lots of delicious flavors. This is a one pan healthy dinner that you will love!

Basically you can use whatever vegetables you have or need to run out because this dish is quite forgiving. One vegetable that has the right instructions is red potatoes – you want them to chop a little if they will bake at the same time as the others.

INGREDIENTS

  1. 2 cups (~ 1 small) red potato
  2. 3/4 pound of green beans
  3. 1 large head of broccoli (~ 1 and 1/2 cup)
  4. 1 and 1/2 cup chopped 2 large sweet bell peppers or 6-7 mini
  5. 9 ounces of smoked sausage I use turkey or chicken, not ground sausage
  6. 6 tablespoons of olive oil
  7. 1/4 teaspoon red pepper flakes optional
  8. 1 teaspoon of paprika
  9. 1/2 teaspoon of garlic powder
  10. 1 tablespoon of dried oregano
  11. 1 tablespoon of dried parsley
  12. 1/4 teaspoon salt
  13. 1/4 teaspoon pepper
  14. Serve with: fresh parsley, quinoa / rice, lots of freshly shredded Parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Cover a large sheet of baking sheet with tinfoil or foil.
  3. Prepare vegetables: cut red potatoes (small chunks here so they will soften in time), cut green beans and cut them in half (see video above recipe), cut broccoli, cut peppers into thick boxes, and put sausages in thick slices.
  4. Place all vegetables and sausages on a baking sheet. Pour olive oil and spices on top. Mix well to coat all vegetables and meat. (I use this 15×21 inch sheet pan)
  5. Bake for 15 minutes, remove from the oven and turn over all the vegetables. Return to the oven and bake again for 10-15 minutes or until vegetables are tender and brown sausages.
  6. If desired, sprinkle freshly shredded Parmesan cheese over vegetables and sausages immediately after leaving the oven.
  7. Enjoy with rice or quinoa and fresh parsley if desired.
