Light Chicken Parmesan

When you are on your lunchtime and you are really craving for some tasteful chicken parmesan, but you are in doubt because you don’t want to sleep right after you finish up your lunch. Then, what do you want to eat? Don’t worry about it, you could still eat chicken parmesan with this easy recipe of light chicken parmesan. Because it is light, it will not make you sleepy. Therefore, this recipe will make you stay awake and it will also satisfy your craving. What a win win solution right. In order to make this tasteful and healthy dish you need to prepare some of these following ingredients and follow some directions below:
Light Chicken Parmesan

Ingredients:

  • ¼ cup breadcrumbs, Italia-style one
  • Parmesan cheese, grated
  • 4 chicken breast, thin sliced
  • 1 pt. grape tomatoes
  • Non-stick cooking spray
  • 5 oz. Arugula
  • 1tbsp red wine vinegar
  • 1 tsp extra virgin olive oil
  • Foil lined baking sheet
  • 2 oz. part-skim mozzarella

Directions:

First thing first you need to preheat your oven on 450° F

Secondly, mix together ¼ cup breadcrumbs with ¼ parmesan cheese that have been grated. Mix them together on a small bowl. After that, cut the grape tomatoes in a half. And then, side them aside.

Next, arrange the chicken breasts on a foil-lined baking oil. After that, sprinkle the chicken breast with a pinch of salt. And then, top the chicken with the breadcrumbs and parmesan mixture. After that, press them to be well adhered. And then, arrange the grape tomatoes around the chicken. After that, spray all of them with non-sticky cooking spray.

After that, move the chicken to the oven. Bake them for around 15 minutes until the chicken is cooked well and the breadcrumbs become golden. Meanwhile you are waiting for the chicken to cook, shred the part-skim mozzarella.

Next, remove the baking sheet from the oven. And then, with tongs you need to move the cooked tomatoes in to a medium mixing bowl. After that, sprinkle the chicken with mozzarella that has been shredded and then return them to oven. Bake it for about 5 minutes or until the cheese is melted.

Last but not least, toss tomatoes with arugula, red vinegar, extra virgin olive oil as well as a pinch of salt. After that, serve it with the chicken parmesan.
