Lamb Chops with Arugula Chimichurri Recipe

A flavorful chimichurri made from spicy aragula, cumin, parsley and garlic is the perfect sauce and seasoning for delicious lamb chops. So that it will be a favorite dinner menu for you, friends, family and loved ones.

  1. (2) c. arugula
  2. (1) clove of garlic
  3. (1) c. fresh parsley
  4. (1/2) c. olive oil
  5. c. red wine vinegar
  6. (1) teaspoon of ground cumin
  7. (12) ribs of lamb
  8. (2) tablespoons of salt


  1. Heat the broiler. Meanwhile, in a food processor, the pulse is to combine arugula, parsley, and garlic. Transfer to a medium bowl. Add olive oil, vinegar, and cumin and stir until evenly mixed. Set aside chimichurri.
  2. Season the lamb chops on both sides with salt, then add to the roast pan. Bake to medium rare, about 5 to 6 minutes per side. Lift and let rest for 5 minutes. Add chimichurri which has been ordered before serving.
