- 500 g beef mince
- 1 egg
- 4 green shallots, thinly sliced
- ¼ continental parsley, finely chopped
- 1 garlic clove, crushed
- 1 tsp allspice
- ¼ nutmeg, grounded
- 2 tsp extra virgin olive oil
- 1/3 cup mussel beef style liquid stock
- 2 tsp Dijon mustard
- ¾ cup pouring cream
- 600 g cauliflower, steamed and then coarsely chopped
- 150 g steamed fresh green bean
- Fresh continental parsley
First, you need to mix all of the beef, shallot, parsley, egg, nutmeg, garlic, and allspice on a large mixing bowl. After that you need to season it well. And then, roll the spoonful of the mixture and make it into balls.
Secondly, put the oil on a non-sticky fraying pan and then heat it over the medium to high heat. After that, add the meatballs. Cook it for about 6 to 8 minutes or till the meatballs become golden. You need to turn the meatballs often during the cooking process. After that move the meatballs to a plate.
Next, add other ingredients such as mustard, stock and pouring cream to the pain. And then wait for it to boil. Once boiled, lower the heat and let it simmer for 5 minutes or until the mixture is reduced by the half. And then, add the meatballs to the pan. Cook for around 2 minutes.
And then, put the cauliflower and the rest of the cream in to a food processor and process it until smooth. After that season it well.
