Here we have keto recipes with cream cheese to make sushi. Even though you are on a keto diet, you still can enjoy sushi!
- 5 oz of cream cheese;
- ½ medium avocado;
- One cup of chopped cauliflower;
- ¼ cup of cucumber;
- 1 nori wrapper;
- Soy sauce;
- One tablespoon of coconut oil.
How to make
Bring the cauliflower and cut 1/5 head of it into florets. Pulse the chopped cauliflower in a food processor and pulse it until the consistency becomes like rice. Prepare a skillet and heat the coconut oil in medium-high heat.
Once it heats up, add the cauliflower that has turned into the rice. Cook it for about 6 minutes or until the rice turns slightly browned and cooked thoroughly. Set aside the rice in a bowl. Bring the avocado and cucumber then slice it in a thin shape. Set aside with the rice and the cream cheese.
Put down a plastic wrap on a flat surface and make sure it is clean already. Set the nori wrapper right on tip of the plastic. Spread the rice over the nori and it could be as thick or as thin as you want but make sure the layer is even though.
Also, make sure you leave room on every edge of the nori wrapper. Set the sliced avocado on one edge of the rice and layer it with cream cheese. Put sliced cucumber on it as well. Roll the plastic wrap along with the nori wrapper slowly.
However, leave the plastic out so you do not roll it along with the sushi. Once the sushi is all rolled, slice it into pieces by using a sharp knife. We highly recommend you to start from the middle to avoid the rice would be pushed by the knife’s pressure.
