Ingredients:

  • 2 to 3 cups almond meal
  • 135 gr cream cheese
  • 3 eggs
  • 1 tsp vanilla extract
  • Melted butter
  • Butter
  • Pistachios
  • Fresh berries

Method:

First thing first you should beat almond meal with cream cheese with a wooden spoon. Gradually ads eggs and beat them together until well mixed and free from lump. After that stir in vanilla extract along with baking powder.

Secondly, sweep the melted butter over a non-sticky fraying pan. And then place it over the medium heat. Pour in the mixture, you don’t need to pour in all of the mixture, because you need more than one pancake. Therefore, pour around ¼ of the mixture. After that, cook it until the underside of the pancake turns golden or about 2 minutes. And then, turn the pancake. You need to be careful because the pancake is a little bit fragile. Continue to cook it until the pancake is done. Repeat the process until all of the batter is up.

Thirdly, serve the keto pancake on plate. And then top it with chopped pistachios, butter and fresh berries. You could choose between strawberry or raspberries. And voila! Your keto pancake is ready to serve.
