Let’s move to another continent. Asian delicacy is also always a good idea for dinner. The Chicken Teriyaki Bowl will be a good choice and it is also not that hard to make. It will take about 25-30 mins to cook. The preparation itself can be about 20 minutes. Here are some ingredients that you will need for the chicken and the sauce:
½ cup low-sodium soy sauce
½ cup water
3 tbsp packed light-brown sugar
3 cloves garlic (minced)
1 tbsp honey
1tbsp minced ginger
1tbsp rice vinegar
1 ½ tbsp cornstarch
Teriyaki Chicken, Rice & Vegetables:
3 ½ olive oil
11/2 lbs chicken fillet (chicken breasts)
Ground black pepper
2 ½ cups small diced broccoli florets
1 ½ – 2 cups of white rice (steam rice will be perfect just like truly Asian cuisine)
1 medium zucchini (diced into half moon)
1 ½ cups matchstick carrots
Sesame seeds (optional but it’s good for the plating too)
To prepare the sauce, get a small saucepan and whisks together low-sodium soy sauce, 2 tbsp of water, brown sugar, garlic, ginger, honey, and rice vinegar. Medium heat is needed to bring the mixture to a light boil. Add the cornstarch and whisk together with the remaining 2tbsp of water. Add the sauce mixture into the sauce pan and reduce the heat slightly. Then allow to boil for 1 minute.
For the chicken, you can brush both sides of the chicken with 1 ½ tbsp of the oil and season pepper.
The teriyaki sauce itself is already salty, thus you do not need the salt. Preheat the grill over medium-high heat. Grill for about 4 minutes per side till it is finished. Then you can go to your veggies. Simply heat the 2tbsp olive oil and saute your veggies for about 5 minutes. After all of these are ready, you can prepare the bowl. Simply fill it with rice on the bottom, veggies, and then your chicken. Pour the sauce on top of the it and add sesame seeds to make it more interesting. Grilled Chicken Teriyaki Bowl is ready !
