Chilled Cucumber Soup with Yogurt and Dill

This soft soup comes from a healthy Greek yogurt ingredient so that the soup feels cool and refreshing. So it is suitable to be served for dinner with family and loved ones.

Ingredients

  • 2 c. Greek yogurt
  • 1 c. vegetable broth
  • English cucumbers
  • green onions
  • 2 tbsp. chopped fresh dill
  • 2 tbsp. chopped fresh parsley
  • 4 tsp. fresh lemon juice
  • 2 tsp. salt

Directions

  1. Mix Greek yogurt and vegetable stock into a large bowl, then set aside.
  2. In food processing, purée 1 peel, diced English cucumbers, 2 slices of green onions, chopped fresh fennel, and chopped fresh parsley.
  3. Add the mixture of cucumber, salt and fresh lemon juice to the yogurt mixture, then curl until evenly distributed.
  4. Stir 1 English cucumber that has been peeled and diced, and 2 more slices of green onions; let cool for 1 hour.
  5. Garnish each serving with chopped batter and croutons.
