Cheesy Tex-Mex Stuffed Chicken

  • 4 oz. coarsely grated Monterey Jack cheese
  • 4 small boneless and skinless chicken breast
  • A pinch of salt
  • A pinch of pepper
  • 3 tbsp. olive oil
  • 3tbsp lime juice
  • 2 thinly sliced bell peppers
  • ½ thinly sliced red onion
  • 5 cup torn romaine lettuce


First, preheat oven for 450° F. Meanwhile, in a bowl mix together scallions and seeded jalapeno, chopped cilantro as well as lemon zest. After that toss them with Monterey Jack cheese.
